Gluten Free-er & Cleaner Weekend #3


Quick update: Friday was spent home with sausage grinders and pulled pork sandwiches. Saturday was busy with baseball and errands.  Kids ate leftovers and the husband and I had dinner with friends.  Went to a few different places around Holland before going to a friends to watch the MICHIGAN WOLVERINES win their game of the final 4.  Monday night will be fun watching them play Louisville.  GO BLUE!! 


Monday morning: Kids went back to school after a long Spring break, so its nice and quiet this morning. Its  raining, which is nice, but it is cold again today and this makes me want  soup.  I have this amazing recipe for a wild rice soup with chicken, white wine, cream, leeks...I can't believe I haven't  posted it before.  Maybe I have, and can't find it.  I'll work on that today and give a nice gluten free-er update tomorrow.  I don't know about you, but the weekends are always rough when you're trying to watch what you eat.

GARLIC MASHED POTATO QUESADILLA
Savory pulled pork, hickory smoked bacon, 
roasted poblano peppers, goat and cheddar jack
cheese, topped with a delicious apple chutney. 
HERB CRUSTED, SLOW ROASTED PULLED PORK “SLIDERS”
Served on mini pretzel buns with crumbled 
gorgonzola, banana peppers & a cabbage slaw
tossed in a smokey garlic slaw dressing.
SOUTHWEST FIESTA SALAD II 
Grilled chicken, black beans and corn with creamy avocado and crucnchy tortilla strips.  Tossed with a spicy jalapeno ranch dressing.
