Gremolata or gremolada is a chopped herb condiment typically made of lemon zest, garlic, and parsley. I used this on top of a pork tenderloin for a Greek inspired dinner.
- zest of two lemons
- 2 cloves garlic, chopped
- 1/2 c fresh parsley leaves, chopped
- 4 oz fresh Feta cheese, crumbled
- 1/2 c toasted pine nuts
- In a food processor, pulse the zest, parsley & garlic until finely minced.
- Add Feta and pulse a couple times just until well-combined. Remove to a bowl and stir in pine nuts.
Served over a just-out-of-the-oven pork tenderloin, the gremolata should melt over your meat, leaving a creamy sauce.
Served over pasta would be nice too.
